Apple Muffins

Serves:  12
Serving Size:  Each muffin contains 175 calories, 7 g fat, 3 g protein, 26 g carbs, low fiber

 Ingredients:

1 egg  1/2 cup sugar
1/2 tsp cinnamon 1/4 cup oil
1 1/2 cups flour 1 cup peeled & finely chopped apples
2/3 cup milk 1 Tbsp baking powder
1/2 tsp salt
Topping:
1/4 cup brown sugar 1/4 cup chopped nuts
1/2 tsp cinnamon

Cooking Instructions:

1. Preheat over to 400 degrees. Grease muffin tins. In a large bowl, mix egg, oil and milk. Set aside.
2. In another bowl, combine sugar, flour, baking powder, salt and cinnamon.
3. Spoon into egg mixture and stir together gently to just mix the ingredients. Mixture will look lumpy.
4. Stir in chopped apples. Spoon into muffin tins, filling half full.
5. To prepare topping, combine brown sugar, nuts and cinnamon in a small bowl. Sprinkle on muffin topping.
6. Bake for 20 minutes or until light brown. Remove from pan and cool on rack.
